
When considering the summit of culinary achievement in Fort Worth, names like Tim Love, Grady Spears, Brian Olenjack and Louis Lambert jump to mind. Chef Clay Wilson, who has had the privilege of working with several of these local culinary artists, is poised to ascend the ranks and join them at the top. Wilson and his wife Michelle are set to launch
Wilson Caters this month and bring fine western cuisine to special events and occasions in the area.
Chef Wilson’s
menu reflects the distinct culinary heritage of Texas, as well as his own love of grilled steaks and chops, seafood, barbeque and Mexican food. Wilson carefully sources his ingredients from local ranches and farms, and evolves his cuisine to highlight the best in seasonal fare. Wilson Caters relies on the principle that the difference is in the detail: breads, sauces, salad dressings and desserts are all made in-house and to order.
Wilson accrued fifteen years of experience in various roles ranging from Sous Chef to Executive Chef. He previously cooked in various restaurants including The Roadrunner in Las Vegas, Nev.; The Nutt House in Granbury, Tex.; Reata in Fort Worth, Tex.; and most recently, The Burning Pear in Sugar Land, Tex.
